Grant number: IZSEZ0_192944 Project title: Protein-Nanocage Stabilized Pickering Emulsions for Nutrient Delivery Beginning of the Scientific Exchange: 09-07-2022 End of the Scientific Exchange: 16-11-2022 The brief objectives of the current research work include: · The digestion profiles of the nCage Pickering emulsions (E2 and AfFtn) · Characterization of the nCage and lipid (GMO) emulsions. For the digestion profiles of the nCage Pickering emulsions: E2 and AfFtn protein cages were used as Pickering emulsifiers to stabilize the rosemary and olive oil as Pickering emulsions. For characterization of the lipid emulsions, E2 and AfFtn were used as Pickering emulsifiers to stabilize glyceryl monooleate (GMO) as Pickering emulsions. The following characterizations were performed to study the emulsifiers and the emulsions: 1. Multiangle DLS- size distribution of emulsifier and final emulsion particle 2. Spinning drop tensiometer- interfacial tension of the emulsion droplet 3. Small angle X-ray scattering (PSI)- digestion profiles of the different Pickering emulsions
